Things I have cooked this summer (August Edition)

Summer is over officially. My first days of classes began yesterday. Thus ends the reign of the non-wife housewife. It was good while it lasted, and I must confess, I am excited to cook with autumn and winter ingredients soon! (I know, I should be punished for saying that with the Kansas winter lurking a few months away).

I learned a lot by doing this. Strange patterns emerged! For example: each month begins with squash or sweet potato! Who knew? Well, here's our final month. Keep in mind, the list is shorter than the others because of vacations, and because school has interrupted the month. Thus:

August Edition

Butternut Squash Baked in Tomato Sauce

Sautéed Vegetables (kale, mushrooms, onion, garlic, green pepper) with Brown Rice and Tofu

Honey Roasted Eggplant with Chilis, coconut rice

Baba Ganoush

Cherry Tomato Tomato Tart

Vietnamese Spring Rolls with Peanut Sauce

Hummus

Beet Hummus

Pasta with Mushroom and Tomato Marinara
